Taggiasca olive is a cultivar of olives grown primarily in the region Liguria Italy (especially the area of Imperia where Modesti is based).
Due to the perfect combination of earth, water and climate, the Taggiasca olive can fully develop its character here. It is one of the world's best known and most popular olive varieties.
The name Taggiasca derives from the town of Taggia. The olives are of low weight, ovoid shape and symmetrical. A loveable Italian olive with a sweet and fruity presence, hints of nutty almond and a firm bite.
For use in oil production the olive is harvested in mid-November and fruits for use as table olives, on the other hand, can be harvested up until May. The fully ripe olives have a dark colour that ranges from black brownish-purple to brownish-black. The Taggiasca cultivar is granted by Protected Designation of Origin - PDO regulations.
