Tosone is a (very) young sister of Parmigiano Reggiano, it is created in the first phases of the manufacturing the famous parmesan.
Tosone is essentially a young and melty Parmigiano Reggiano - a by-product obtained during the production of the most famous cheese of Emilia Romagna.
When the newly made cheese is shaped into wheels, the surplus cheese strips obtained from trimming the wheels are collected (hence the name: trimming) - and tosone is ready to be consumed.
In old times, parents used to give it to children as a treat or very often, as a snack for school. Today it's as prestigious as parmigiano and a well respected ingredient of many gourmet dishes
Pale straw-yellow in color, with a smooth and tender texture, and a marked lactic hint in taste, tosone is delicious enough on its own, but its full potential is unveiled when it is melted, tossed in a hot pan over sautéed porcini, or wrapped in crispy pancetta and baked, drizzled with a few drops of another local delicacy: aceto balsamico di Modena.
The delicate and elastic sticks of tosone cheese can be enjoyed raw, or breaded and fried.
Free of salt and preservatives, it is excellent as a snack for children or to be enjoyed fried or wrapped with bacon on a griddle.
