Pesto alla Trapanese is the condiment for the Sicilian pasta dish par excellence, a few ingredients that release an immensity of flavours and aromas.
Pesto alla Trapanese represents a Sicilian twist on pesto, originating from the province of Trapani. It's alternatively referred to as pesto trapanese or pesto alla siciliana, and in the Sicilian dialect, it's known as pasta cull'agghia. This flavorful sauce combines garlic, basil, almonds, tomatoes, salt, and black pepper, all bound together with extra virgin olive oil.
The dish has ancient roots, believed to have been brought by Genovese ships from the east and introduced at the port of Trapani. These ships carried the tradition of agliata, a garlic and walnut-based sauce, which was then further developed by Trapani sailors with local ingredients such as tomatoes and almonds.
"Busiati with pesto trapanese" has been officially recognized as a traditional Italian food product (PAT) by the Italian Ministry of Agricultural, Food and Forestry Policies.
The basil and tomatoes are selected and washed by hand, then blended together with red Nubian garlic and almonds, and finally seasoned with extra virgin olive oil, salt and pepper.
