Nostalgaia committed to organic farmingearly on. As soon as certified organic cultivation became available in Greece, their plantations were included in this system, which now accounts for a significant portion of their production.

The Koroneiki – The Soul of the Oil
The base of Nostalgaia's olive oils is the Koroneiki olive variety, which is considered one of the finest olive varieties worldwide.
This small-sized but high-oil-content variety provides intense aromas and a rich flavor profile. The oils made from it are characterized by:
- vibrant golden-green color
- fresh, green olive-like aroma
- low acidity
- balanced, slightly bitter and pungent taste
This character makes it extremely versatile: perfect for salads, grilled meats, vegetables, or even with a simple, good quality bread.
Precision in Every Step
The key to quality lies in the details. Harvesting begins early, usually around November, when the olives are still partly unripe – this ensures a higher polyphenol content and more complex flavors.
The picked olives are processed within a few hours using cold pressing (below 27°C) to preserve the aromas and nutrients.
Storage also receives special attention: it takes place in stainless steel tanks, protected from light and oxygen, at controlled temperatures, often under nitrogen protection. This guarantees that the oil retains its freshness and quality until bottling.
