This is not an "average" olive – but a true rarity from the heart of Crete, the Messara region. The specialty of Throubolia (also known as Throumba) olives lies in the fact that they naturally over-ripen on the tree, losing their bitterness in the process – thus eliminating the need for aggressive processing or chemical treatment.

After harvest, they are often lightly dried and preserved with sea salt, which gives them a concentrated, deep, and slightly sweet, raisin-like character. Their texture is meaty, slightly wrinkled, and their taste is a completely different dimension from ordinary olives: intense, yet well-rounded and natural.

This is the kind of olive that you don't "just eat" – you savor it. Perfect on its own, with a glass of wine, but also fantastic in salads, with cheeses, or as an accompaniment to hot dishes.

A true terroir product, imbued with the sunshine of Crete, the sea air, and centuries of tradition.
