Crafted by Tallaroga Formaggi, a dedicated Sardinian producer, Tallaroga Caprotto is a soft, raw milk goat cheese that captures the essence of Sardinia’s rugged landscape and pastoral tradition.
Made from whole goat’s milk sourced from free-ranging flocks grazing on wild Sardinian pastures, this cheese is a true expression of place and craft. Caprotto is aged for 30 to 60 days in cool conditions, developing a creamy white interior with small, sparse eyes and a distinctive dark caramel or black rind.
Its flavor is sweet, mild, and delicately tangy, with a soft texture that melts beautifully on the palate. The milk is curdled with calf rennet and enriched with carefully selected natural ferments.
Each wheel weighs about 3 kg and measures 20 cm in diameter, but in our webshop you can enjoy it in convenient 200–300 g vacuum-packed portions, perfect for your cheese board, salads, or gourmet recipes.
