Carob flour is mostly made in the Algarve region in Portugal and the country is one of the worlds largest producers (and they claim to produce the best carob flour in the world).

This carob flour is brought to you by Campos Santos, a small artisan producer from the Algarve region.

Derived from the pods of the carob tree, a Mediterranean treasure, carob flour is a versatile and nutrient-rich alternative to cocoa and traditional flours.

Carob flour has a very pleasant sweet flavour reminiscent of chocolate, with hints of caramel., it is caffeine-free, allergen-free, gluten-free and low in fat (basically fat free), making it an excellent choice for anyone seeking a wholesome ingredient.

It’s packed with dietary fiber, antioxidants, and essential minerals like calcium, potassium, iron and magnesium, supporting digestion and overall health.

How is it made?

The carob pods are harvested in a traditional way and by hand. The pods then go through the first processing step: mechanical crushing to separate the pulp from the seeds. Then, the pulp undergoes a milling and micronization process, where it is reduced to powder. When the particles reach their ideal size, the powder is toasted to awaken a variety of flavors.

In the kitchen, carob flour shines in both sweet and savory recipes. Its naturally sweet, slightly nutty flavor makes it perfect for baking cakes, cookies, and bread.  It is perfect for preparation of desserts, porridge, pudding, or to thicken sauces and fillings.

Use it as a 1:1 substitute for cocoa in your recipes or combine it with other flours for added richness. Carob is also great in smoothies, homemade energy bars, and as a topping for yogurt or oatmeal.
