Fileja is a cherished pasta from Vibo Valentia, Calabria, where our partner, Pastificio Fiorillo proudly crafts this traditional variety.

Known as Calabria's most iconic pasta, Fileja carries the local names "maccarruni" or "filedda" in the regional dialect. Made simply from Italian durum wheat semolina and water, this pasta was hand-shaped by rolling thin dough around a slender cane, creating long, hollow tubes roughly 20 cm in length and 3–4 mm thick.

Fileja is a staple for special occasions and Sundays in Calabria, often paired with rich Calabrian flavors. It shines in classic dishes featuring minced pork sauce or a fresh tomato sauce, and for lovers of spice, it pairs perfectly with Calabrian 'Nduja’ sausage.

Fileja is also available in various unique flavors, such as mushroom, onion, chili, and cuttlefish ink, each adding a distinct touch to the dish.

This natural Fileja from Pastificio Fiorillo is bronze-drawn and undergoes slow drying to preserve its flavor, nutritional value, and texture. It’s an exceptional base for any sauce, bringing the essence of Calabria to your kitchen.
