The black olives prepared by the nuns of the Ormylia Monastery are a truly special, traditional Greek delicacy, originating from the sun-drenched olive groves of Halkidiki.

These olives are harvested at full ripeness in November, when they have a rich, deep flavor. During the harvest, each olive is hand-selected, with only the largest and most perfect pieces being processed.

Processing is done entirely by traditional methods: the olives are cured in barrels filled with coarse sea salt, where they slowly lose their natural bitterness. This patient, time-consuming process gives the product its deep, concentrated character.

After curing, the olives are dried and then flavored with spices – oregano, thyme, and basil – complemented by a little vinegar and extra virgin olive oil, which makes the taste experience even richer and more complex.

The result is an intense, yet balanced delicacy: fleshy, full-bodied, slightly salty, and aromatic, with a long finish.

Perfect for antipasto platters, alongside cheeses, in salads, or simply on its own, accompanied by a glass of wine.

A true artisan product that embodies the tranquility of monastic work and the respect for Mediterranean traditions.
