The aged sheep cheese from the Spanish cheese manufacturer La Leyenda, made with rosé sparkling wine, is a truly festive piece: with its spectacular, rosy-hued rind, full sheep's milk character, and delicate fruity aromas, it immediately stands out on a cheese board.

This is not an everyday cheese, but a special delicacy that is elegant, playful, and pairs very well with wines, sparkling wines, and fruits.

The cheese is a product of Spanish Cheese, a Spanish cheese specialist operating in Albacete. In addition to classic Spanish protected origin cheeses, they also produce special, modernly aged and flavored cheeses. The La Leyenda Champagne Rosé sheep cheese perfectly represents this direction: a traditional sheep cheese base with a special, elegant coating.

The cheese is made from pasteurized sheep's milk and then coated with a rosé sparkling wine-based rind during aging. This coating gives it its characteristic pink rind and delicate, fruity aromas. The rind is not intended for consumption, but the effect of the aging and coating is beautifully reflected in the cheese's aroma and character.

Its texture is semi-hard, easy to slice, yet pleasantly creamy. The sheep's milk gives the cheese a full, slightly buttery, rich flavor, which is complemented by the elegant, fruity, slightly winey aroma of the rosé sparkling wine coating. Its taste is not sweet, but rather delicately aromatic: the depth of the sheep cheese, the milky-buttery notes, and the rosy-fruity finish are in beautiful balance.

This cheese works particularly well on festive cheese boards, in gift baskets, or as a centerpiece for wine evenings. It can be served with fresh grapes, strawberries, figs, quince cheese, almonds, or pistachios. It is also an exciting choice alongside sparkling wines, cavas, rosé wines, and lighter reds. On a spectacular cheese board, it immediately catches the eye not only for its taste but also for its color.

The cheese is freshly cut from the whole wheel and then offered vacuum-packed in pieces of approx. 150–250 grams; the desired size can be selected at the top of the page.
