The classic Romesco sauce – rooted in Catalan culinary traditions – is a rich, nutty, tomato-pepper cream originally created by fishermen around Tarragona to accompany their daily catch.
Romesco is usually made from grilled red peppers (often ñora or a similar variety), tomatoes, garlic, roasted nuts (most often almonds, sometimes hazelnuts), olive oil, vinegar, and a little spice.
Its texture is smooth but rich (thanks to the ground nuts and added rice) with a smoky-sweet, slightly tart, deeply savory flavor.
Produced in Navarra by Conservas Artesanas Rosara, the product contains carefully balanced proportions of olive oil, almonds, dried red pepper (“pimiento choricero”), tomatoes, onions, a little wine or vinegar and delicate spices.
This composition results in a light but full-bodied sauce that retains the characteristic crunchy texture and flavor of the toasted almonds, as well as the slight sourness of the vinegar – perfect for those who appreciate authentic flavors.
