Cucunci are the mature fruits of the caper plant, not to be confused by the (also widely used) capers. These are the large fruits of the plant while the smaller capers are the buds.
The fruits are harvested by hand (mostly on the small islands off the coast of Sicily), cured for 20-30 days and then preserved in white wine vinegar.
The beautiful caper friuts of Antica Bottega Siciliana have an intense green color and a sour and slightly salty flavour. The texture is crunchy and meaty. Cucunci are larger than regular capers and have a more delicate flavour.
It is a versatile product that can be used in the kitchen in different ways.
They are perfect as an antipasto, to accompany meat, fish, cheese and vegetable dishes. They can also be used to prepare pizzas, focaccias and salads. Also ideal for aperitifs, like as a garnish of a perfect martini.
