The Taggiasca olive is most widely grown in Liguria, in northern Italy, and more specifically in the Imperia region (where Frantoio Bianco is based). Its cultivation flourishes in this area thanks to the ideal combination of local soil, water and climate.
The Taggiasca variety has small to medium-sized fruits, with an elongated oval shape, slightly thicker at the bottom and a smooth surface. The flesh is dense and retains its firmness over time. The color of the Taggiasca olive ranges from dark green to shades of green, purple and intense brown. It is highly sought after for its distinctive appearance and unique flavor profile.
Taggiasca olives are prized for their sweet and harmonious flavour. Their durability makes them suitable for preservation in oil or brine. Brine, a traditional process using a solution of water and salt, is the oldest and most reliable technique for preserving food.
The Taggiasca variety is considered one of the best table olives, but it is also excellent for producing extra virgin olive oil.
