The green olives of Ormylia Monastery are an elegant, natural expression of classic Mediterranean flavor, coming from the sun-drenched olive groves of the Halkidiki peninsula.
The olives are harvested as early as September, while still vibrantly green, with each fruit hand-picked with great care to preserve its perfect integrity. Only traditional methods are used during processing: the olives mature for many months in a natural brine until they slowly lose their bitterness while retaining their crisp texture and nutritional value.
After maturation, they are flavored with lemon and wild oregano, which gives the olives a fresh, vibrant character. The subtly citrusy, herbaceous aromas create a perfect balance with the natural, pure olive taste, resulting in a refreshing and harmonious overall experience.
