Parmigiano-Reggiano takes its name from the Italian provinces of Parma and Reggio Emilia, where it is exclusively produced.

Both "Parmigiano-Reggiano" and "Parmesan" are protected designations of origin (PDO), ensuring they are only made in these regions under strict Italian and European regulations.

Parmesan has been called many names before: the "king of cheeses" and "practically perfect food".

This Parmigiano-Reggiano PDO cheese was manufactured by Latteria Nuova Mandrio, a cooperativo founded in 1948 by a few farmers from the Correggio area.

The company is a member of the Consorzio del Formaggio Parmigiano-Reggiano, the consortium that strictly supervises all the Parmiggiano cheese factories.

Parmigiano Reggiano features aromas and flavours that are different depending on the maturation, which makes it particularly versatile and suitable for several pairings ranging from fresh fruit to full-bodied wines, as well as beers and jams.

Proteins account for at least 32% of the energy value of Parmigiano Reggiano that is also rich in amino acids, essential for the diet of athletes.

This 12 month old Parmigiano by Latteria Nuova Mandrio is the youngest of their Parmesan family. It has a straw yellow color and slightly soft texture sweet like milk and yogurt, but also has a slight nutty flavor and a fruity aroma.

It is an excellent cheese for grating and melting, and it pairs well with many different foods. It's a popular choice for use in pasta dishes, on salads, and in risottos.
