One of Gold Amvrosia's most unique honeys is the Kefalonian black fir "vanilla" honey, which comes from the highest mountain on Kefalonia, Mount Ainos. The bees forage among Greek fir trees – Abies cephalonica – located at an altitude of approximately 650–1,800 meters within the Ainos National Park. This species of fir is native to Greece, and its scientific name also refers to Kefalonia.
It is important to note that, in this case, "vanilla" does not mean added flavoring. This is a natural fir honey, or more specifically, honeydew honey: the bees do not collect flower nectar, but rather harvest and process the natural honeydew found on the fir trees.
The result is truly extraordinary in both appearance and taste. The honey is golden-colored with a distinctive iridescent, pearlescent shimmer, and its texture is thick and velvety. Its taste is less sweet than most flower honeys; it is elegant, full-bodied, and complex, with delicate notes of thyme.
Due to its lower natural sugar content, it crystallizes very slowly or not at all, thus retaining its thick, liquid consistency for a long time. Its extraction is also more difficult than that of traditional honeys: the honeycomb must be partially sacrificed during the extraction process, which is why it is produced in limited quantities.
Because of its unique nature, this honey is best tasted on its own, but it also works excellently with plain Greek yogurt, nuts, aged cheeses, or as part of a simple breakfast.

Gold Ambrosia
The home of Gold Amvrosia is Achaia, in the northwestern part of the Peloponnese peninsula. Today, the family business no longer produces only special Greek honeys: it also grows olives in its own Achaian olive groves, from which its premium extra virgin olive oil is made.
