La Celestina Queso de Cabra Madurado is a traditional Spanish cheese made from pasteurized goat's milk and slowly matured for a short period (1 month) to develop depth, balance and character. During the maturing process, the cheese acquires a compact but pleasantly creamy texture, a pale ivory colour and a clean, natural appearance.
It has a balanced taste: slightly tart at first, then delicate nutty notes and a slightly salty aftertaste. Maturation softens the acidity typical of fresh goat cheeses, resulting in a smooth, elegant cheese.
