La Celestina Cabra Roquefort Suave is a soft, delicately ripened goat cheese that combines the freshness of young goat cheese with the subtle flavour of surface-ripened cultures.
Made from 100% pasteurised Spanish goat's milk and matured with a special rind microbiota, including Penicillium roqueforti and Penicillium candidum cultures, it develops a thin, bloomy rind with a delicate, creamy white-gold blue veining inside.
Upon first tasting, the texture is soft and inviting, with a smooth, almost luscious mouthfeel. The flavour unfolds delicately, transitioning from a gentle, milky sweetness to subtle, salty notes that carry the earthy complexity resulting from the development of the rind culture, yet always remaining refined.
Serve this cheese at room temperature to allow its full aroma to unfold. It is excellent on its own but also stands out with simple accompaniments – serve with fresh pear or apple slices, quince preserve, or a spoonful of fig jam to highlight its milky richness.
