Manchego semicurado, produced by renowned Spanish cheesemaker Quesos Corcuera , represents the youngest version of this iconic cheese type.

Corcuera is a family-run cheese factory in La Puebla de Montalbán, in the heart of Castilla-La Mancha, known as a reference for Manchego cheeses with Protected Geographical Origin (D.O.P.).

Thanks to their commitment to tradition and innovation, they have won numerous awards at the World Cheese Awards and other prestigious international competitions, reinforcing their position as one of Spain's leading artisan cheese producers.

This semicurado, or semi-ripened, Manchego cheese is aged for about three months, retaining its mild, characteristic flavor and maintaining a creamy, supple texture.

The cheese has a pale ivory color, a buttery taste, a smooth, slightly elastic texture, and a slightly nutty and sweet flavor typical of Manchega sheep's milk, followed by a clean, pleasant aftertaste.

Due to the shorter maturation time, this cheese is the perfect introduction to the world of Manchego cheeses for those who prefer a balanced, approachable flavor.

Manchego Semicurado is ideal for cheese selections, tapas or light, young red or white wines, this cheese reflects the harmony of craftsmanship and originality.

Like all Corcuera cheeses, each wheel is made using traditional techniques, ensuring compliance with the strictly controlled DOP designation.
