This particular Parmigiano-Reggiano is produced by Latteria Nuova Mandrio, a cooperative founded in 1948 by farmers from Correggio. The company belongs to the Consorzio del Formaggio Parmigiano-Reggiano, the governing body which strictly controls quality and authenticity.
With its flavors and aromas varying by maturation, Parmigiano Reggiano is highly adaptable, pairing wonderfully with fresh fruits, bold wines, beers, or jams. It’s also a nutritional powerhouse, with proteins comprising at least 32% of its energy value and essential amino acids supporting active lifestyles, particularly for athletes.
36-month old Parmigiano Reggiano is called “very old”, the color is even darker, it's the most mature and intense version of the cheese.
The Parmigiano Reggiano aged for 3 years is particularly dry, crumbly and grainy, with an intense and decisive aroma. The notes of spices and dried fruit are predominant, also, deep, nutty flavor with hints of caramel and a long, lingering finish. It is perfect to be tasted with honey or balsamic vinegar.
It is highly digestible and very rich in nutrients, also, suitable for lactose intolerant people and younger children.
How to store
Once purchased, it is advisable to store it in the refrigerator to keep all its aromatic characteristics and ensure an optimal preservation of the product.
Vacuum-packed Parmigiano Reggiano can be stored in the refrigerator at a temperature ranging from 4 to 8°C for up to 6 months. It is important to make sure that the package is sealed and tight, and not exposed to the air.
It is reccomended to open it one day before the use for oxygenation and after that, keep the cheese in the special paper marked Parmigiano-Reggiano which is present in the box you receive. This way you can keep the cheese for one month in the fridge.
