Generally, there are two major versions of Pesto alla Genovese (and opinions are divided as to which is more delicious): with or without garlic.

This is the "delicato" version, without garlic, oherwise the ingredients are the same as in the other Modesti Pesto alla Genovese.

In essence, Pesto Genovese, a globally acclaimed paste, combines crushed garlic (this version is without garlic), European pine nuts, coarse salt, basil leaves, and hard cheese like Parmesan or pecorino sardo, blended with olive oil. Its roots trace back to Genoa, the capital of Liguria, Italy.

The term "pesto" originates from the Genoese verb "pestĂą" (Italian: pestare), meaning "to pound" or "to crush," reflecting its traditional preparation method of crushing or grinding the ingredients in a marble mortar with a wooden pestle.

Pesto is traditionally served with pasta, such as mandilli de sĂŠa ("silk handkerchiefs" in Genoese dialect), trofie, or trenette, often accompanied by potatoes and string beans boiled in the same pot as the pasta.
