This Pesto Genovese is an autentic pesto from Modesti, based in Arma di Taggia, the heart of Liguria, the birthplace of pesto.

This is the region where the best basils are grown near the town of Prà and the the best olive oil for the authentic Pesto Genovese is made from the Taggiasca olives, typical to Liguria.

About pesto in a nutshell:

Pesto Genovese, one of the world's most famous pastes, typically comprises crushed garlic, European pine nuts, coarse salt, basil leaves, and hard cheese like Parmesan or pecorino sardo (sheep's milk cheese), all blended with olive oil. Its origins trace back to Genoa, the capital city of Liguria, Italy. 

The term "pesto" derives from the past participle of the Genoese verb "pestâ" (Italian: pestare), meaning "to pound" or "to crush," reflecting the original preparation method. As per tradition, the ingredients are "crushed" or ground in a marble mortar using a circular motion of a wooden pestle.

Pesto is commonly paired with pasta, traditionally with mandilli de sæa ("silk handkerchiefs" in Genoese dialect), trofie, or trenette. Additionally, potatoes and string beans are traditionally included in the dish, boiled in the same pot as the pasta.
