The Ligurian red pesto or Pesto Rosso is an evolution of the more famous and traditional Genovese pesto so much so that the recipe includes many of the ingredients of the Genovese pesto (basil, oil, Grana Padano, pine nutsâŠ).
Its distinctive feature is the use of dried tomato, pulp and concentrate from which its typical red color also derives.
Ideal for seasoning pasta, trofie, gnocchi and lasagne, it is also used (especially in Anglo-Saxon countries) as a spread on bruschetta and sandwiches and as a salad dressing.
Ingredients: dried tomatoes 45%, extra virgin olive oil, sunflower seed oil, basil 11%, tomato pulp, mix of mature cheeses (cow's milk, salt, rennet), cashews, vinegar, garlic, salt, citric acid
Once opened, store in the refrigerator and consume within a week.
