Brisa's pigs roam freely in the forests and pastures of Dehesa, eating mostly acorns, resulting in meat with a deep flavor and succulent fat content. This special Iberico pig is the basis for all the salchichón, chorizo and ham made in their meat factory.
The velita type is a thin sausage that offers maximum flavor in its small size. To make this salchichón, Brisa first selects premium quality lean and fatty cuts from acorn-fed Iberian pigs, finely minces them, and then mixes them with salt, black pepper, and carefully selected spices.
Unlike chorizo, this version relies more on pepper than paprika, which gives it a distinctive, aromatic flavor. The seasoning is subtle but critical—just enough to bring out the flavor of the meat, but not overpower it. The salami is stuffed into a collagen casing and aged at controlled humidity and temperature until it reaches the right consistency and flavor.
The finished salchichón has a firm but elastic texture, compact but delicately melting. Its taste is peppery warmth, the richness of delicious pork, a slight nutty flavor and a long aromatic aftertaste. Its aroma is delicate, concentrated, with notes of cured meat and spices. The thin slices really emphasize its elegance.
