Cucunci are the mature fruits of the caper plant, not to be confused by the (also widely used) capers. These are the large fruits of the plant while the smaller capers are the buds.
The fruits are harvested by hand (mostly on the small islands off the coast of Sicily), cured for 20-30 days and then preserved in white wine vinegar.
