The Ligurian Taggiasca Olive is an olive cultivar typical above all of the Ligurian West and in particular of the Province of Imperia, where Modesti is based. Thanks to the characteristic soils, water, and climate of the area, Taggiasca olives can fully showcase their character here.
This variety is one of the most renowned for the production of extra virgin olive oil and one of the best table olives, since the fruit, despite its small size, is very tasty and rich in oil.
Ideal as an appetizer, in salads, with fish and for a good Ligurian sauce (tomato, DOP Genoese basil and Ligurian Taggiasca olives).
This is one of the most sought-after olive varieties in the world. The name Taggiasca originates from the city of Taggia.
The olives are small, egg-shaped, and symmetrical. A truly lovable Italian olive, with a sweet and fruity taste reminiscent of walnut almonds and a distinct texture.
The olives are harvested for oil production in mid-November, while those intended for consumption can be harvested until May. The color of fully ripe olives ranges from dark brownish-purple to dark brown-black. Taggiasca olives are grown according to the rules of protected designation of origin (PDO).
