This special Salsa di Noci or walnuts sauce is made by Modesti in the heart of the Northern Italian province of Liguria, made only with natural ingredients.
Together with Pesto alla Genovese, it is one of the great classics of Ligurian cuisine, commonly used in Genoa , Savona and their respective provinces.
With Pesto Genovese, it has in common the fact that it is based on oil seeds. The recipe basically uses only 3 ingredients, 50% walnuts, 35% extra virgin olive oil and Grana Padano. This lightly underrated sauce is a real flavour bomb in your mouth.
The most classic and typical combination of the Ligurian tradition is Pansotti alla Genovese (small triangles of filled fresh pasta) but it is not uncommon to spread the walnut sauce on a nice slice of toast.
It can also be consumed with tagliatelle, gnocchi or trofie (a typical ligurian pasta you can also buy in our shop).
