Olivia's Winery was born in 2014, the year they launched their first transmontano regional wine, and became the first ever bottling producers in the county.
Bottling was not common at all in the area, according to Vítor, "it has always been common practice for each farmer to produce a little wine for their own consumption and that of their employees, with the surplus being sold in 5-litre bottles to friends and acquaintances straight from the barrel. This tradition is still maintained by two or three farmers in the borough".
Year after year, they have tried to perfect and adapt the production system, both in the vineyards and in the cellar, to market requirements.
Today, the Bebiano estate covers approximately 65 hectares, of which 8 hectares are vineyards, 9 hectares olive groves, 5 hectares almond groves and the remaining hectares are woodland and natural pastures, all under organic production methods.
With the surplus from winemaking, stalks and skins, they feed their animals (bísaros pigs and churras sheep) which in turn will provide them with organic matter that allows them to fertilize the farm.
