Among the traditional pastas of Sicily, one of the most interesting is busiata, a spiral shape achieved by wrapping strips of pasta around a thin rod. This shape, typical of the Trapani region, holds sauces beautifully.
In this version, the pasta is colored with nero di seppia, or squid ink, which gives it a stunning black color and a hint of seafood flavor.
The combination of artisanal pasta making and the addition of squid ink reflects Sicily's deep connection to the sea. Fishermen and chefs have used this ink in their cuisine for centuries as a natural coloring and flavoring, especially in coastal regions.
Busiate al Nero di Seppia goes well with seafood-based sauces. It is often served with squid, mussels or shrimp, where the ink-enriched pasta enhances the seafood character of the dish.
