Cecinas Pablo, located in Astorga (province of León), Spain, is a family business that started as a small butcher shop in the early '90s. From the beginning, they strived to preserve and perfect traditional meat curing processes, and today they have become an internationally recognized producer. Their philosophy is based on the use of high-quality ingredients, a artisanal approach, and a commitment to continuous development.

"Cecina", or thinly sliced cured beef ham, is an iconic specialty of Spanish cuisine, often referred to as the beef equivalent of jamón.

It is made from high-quality beef (hind leg), which is salted, then air-dried for a long time, and finally lightly smoked. In the last phase, it is further aged in curing cellars until the characteristic taste and aroma of cecina develop.

The result is a delicacy with an intense, deep flavor, a subtly smoky aroma, yet an elegant texture.

In the case of Cecinas Pablo, all of this is done exclusively with beef and salt, without additives, and with light smoking using oak and holm oak wood.

Thanks to the sliced packaging, it can be consumed immediately: it's best at room temperature, with fine, fresh bread and olive oil, but it's also excellent for tapas, salads, or premium sandwiches. A bite of Northern Spain, where the taste of tradition and patience meet.
