Escalivada is a traditional dish from Catalonia, featuring smoky grilled or roasted vegetables. This simple yet flavorful side dish or tapas usually includes roasted eggplant and bell peppers, drizzled with olive oil and sometimes accompanied by onion, tomato, minced garlic, and a pinch of salt.

The name "escalivada" originates from the Catalan verb escalivar, meaning "to cook in ashes," which reflects the dish's traditional method of preparation over wood fire embers.

Rosara"s made their Escalivada, this is a wonderful typical Catalan dish "their style". They roast the vegetables in the oven: eggplant, onion and piquillo peppers and they season it with olive oil, nothing else: natural and delicious. It is also low in salt: only 0.08 gr. per 100 g. and only 6.3% fat.

This dish is made with very tender vegetables, treat with care. It can be eaten cold or at room temperature or heated in the oven or in the pan over low heat. It combines very well with anchovies, black olives, melted cheese, oregano, marjoram or as a garnish for fish and meat.
