This special pasta resembles the leaves of the olive tree, known in Puglia (and other regions) as foglie d'ulivo. Its elongated, slightly flattened shape resembles the slender leaves of an olive branch - a very nice symbol of Puglia's olive-rich landscapes. In this version, the pasta is colored with 2% dried spinach, which gives it a bright green hue and a touch of vegetal freshness.
Thanks to the traditional artisanal process and slow drying, the pasta retains its firm, almost fresh texture even after cooking. Its rough surface holds sauces well, making it ideal for a variety of toppings. Try it simply with butter and parmesan, or make it even more delicious with a light vegetable pesto, rustic tomato sauce or even a mushroom and cream ragu.
