Fusilloni are the bigger, bolder cousins of the classic fusilli. While fusilli are small spirals perfect for light sauces, fusilloni feature a larger, looser spiral shape that adds drama to any dish—not just in looks, but in flavor.
Their size and thickness make them ideal for holding hearty, chunky sauces, turning everyday meals into rustic and satisfying plates.
Traditionally associated with southern Italian regions, fusilloni are especially popular in Campania and Calabria - where the producer Pastificio Fiorillo is based in.
The name comes from fuso, meaning "spindle," referencing the original method of twisting the dough by hand around a rod. Today, Pastificio Fiorillo preserves this artisanal spirit by bronze-drawing and slow-drying their fusilloni, using only Italian durum wheat semolina and water. This process gives the pasta its rough texture—perfect for catching sauces—and helps preserve its natural flavor and nutritional qualities.
Fusilloni are incredibly versatile but shine best in rich, robust dishes. Try them with ragùs (meat or vegetable-based), sausage and mushroom sauces, or oven-baked in a cheesy tomato gratin. They’re also excellent with seasonal vegetables like zucchini, eggplant, or pumpkin, combined with ricotta or pecorino for a true Calabrian twist.
