Jamón serrano is a staple of Spanish gastronomy: a salted, air-dried, and long-aged pork ham that can be found in Spain just as easily on the counter of a simple tapas bar as on a festive table. Sliced thin, it counts as a complete dish on its own—requiring at most a little bread, a few olives, and a glass of wine.
The Jamón Serrano Reserva arriving at Sol Deli is aged for at least 12 months. During the long aging process, the meat gradually loses moisture, its texture becomes denser, and its flavors concentrate. The character of a good serrano ham is salty, meaty, and slightly nutty, while the thin layers of fat soften at room temperature, making the overall experience richer and juicier.
Serrano or ibérico – what is the difference?
The two terms are often confused, even though they do not mean the same thing. Serrano is essentially a traditional Spanish cured ham made from white pigs, while jamón ibérico is made from the Iberian pig breed and has its own regulated category system.
Serrano is therefore not a "weaker version" of ibérico, but a different Spanish ham tradition. It is easier to eat, generally less intense, and more versatile for everyday use—which is why it is such a natural part of daily meals in Spain.
How should you eat it?
The most important rule: do not eat it directly from the fridge. It is worth leaving it at room temperature for 15–20 minutes before serving so that the fat in the ham softens slightly and the aromas from the aging process can fully emerge.
It is excellent on its own as a tapa, but it goes well with Manchego, olives, picos or rustic bread, tomatoes, and extra virgin olive oil. You can also make a classic Spanish breakfast with it: grated tomato, a little olive oil, and a few slices of jamón on toasted bread.
There's no need to overthink the wine pairing either: a dry cava, a lighter tempranillo or garnacha, or perhaps a glass of fino sherry are great companions.
Thanks to its 100-gram, thinly sliced packaging, there is no need for a ham stand or a knife: just open it, let it come to room temperature for a few minutes, and it is ready for the table.
