Mejillones en escabeche, or mussels preserved in a spiced vinegar marinade, is one of Spain's classic seafood tapas dishes. La Chinata has transformed this familiar flavor profile into a soft, spreadable pâté.

The recipe brings together mussels and tuna with extra virgin olive oil, wine vinegar, tomato, and spices. The result is intensely oceanic with a slightly acidic, spicy flavor, while maintaining an exceptionally smooth and creamy texture.

The simplest way to enjoy it is also one of the best: lightly chilled and spread on toasted bread, picos, or crispy regañás. La Chinata also recommends pairing it with caramelized onion or vegetable jam – the sweetness beautifully counterpoints the acidity of the escabeche.

It works for more than just tapas: it can also be used as a seasoning for fish dishes, rice, or even pasta.
