The experts at Ditta Artigianale decided that this new blend, named ONE, would use coffee from only ONE country, Honduras, and from only ONE producer, as well as only ONE botanical variety, Catuai, sourced from only ONE production region, a small plot of land.

They work with only ONE producer, Marisabel and Moises Caballero from Finca El Puente.

Finca El Puente is a renowned coffee farm in the La Paz region of Honduras, an area known for producing high-quality and unique coffees. The farm is run by Marysabel Caballero and her husband, Moises Herrera, who are two prominent figures in the coffee industry, having won numerous awards, including the Cup of Excellence.

Francesco - one of the owners of the Florence roastery and cafe - used four different processing methods to prepare the coffee.

In fact, the blend consists of one washed, one natural, one semi-anaerobic, and one anaerobic coffee. He chose this approach to demonstrate how a single origin can evolve in creating different flavor profiles.

Four different processes that together create complexity, intensity, acidity, and sweetness, not just to make an espresso, but a truly unique espresso. All this serves to showcase the global development of coffee, but also the expertise of individual countries of origin.

Francesco Masciullo, head of coffee at Ditta Artigianale, won the 2026 Italian Coffee Roasting Championship, officially earning him the title of “Best Coffee Roaster in Italy.”
