Parmigiano-Reggiano cheese takes its name from the provinces of Parma and Reggio Emilia, where this iconic cheese is made.
The names “Parmigiano-Reggiano” and “Parmesan” are protected as designations of origin under Italian and European law, meaning that only cheeses made in these regions can bear these names.
Over the centuries, Parmesan has earned titles such as "king of cheeses" and "practically perfect food" due to its exceptional quality.
This special Parmigiano-Reggiano cheese is produced by Latteria Nuova Mandrio , a cooperative founded in 1948 by farmers from Correggio. The company is a member of the Consorzio del Formaggio Parmigiano-Reggiano , a supervisory body that strictly controls the quality and authenticity of the products.
Parmigiano-Reggiano is an extremely versatile ingredient due to its changing flavors and aromas depending on its maturation, and it pairs well with fresh fruits, bold wines, craft beers or jams.
It is also a powerhouse from a nutritional point of view: at least 32% of its energy value is made up of proteins, and essential amino acids are particularly helpful for an active lifestyle, making it especially useful for athletes.
The 30-month Parmigiano Reggiano cheese is called "very old", its color is even darker, this cheese is the most mature and intense version of the classic Parmesan.

Aged for nearly 3 years, Parmigiano-Reggiano is particularly dry, crumbly and grainy, with an intense and distinct aroma. Notes of spices and dried fruits dominate, and it has a deep, nutty flavor with caramel notes and a long, lingering finish. Perfect with honey or balsamic vinegar.
It is highly digestible and very rich in nutrients, can also be consumed by people with lactose intolerance and is also suitable for small children.
How to store?
After purchase, it is recommended to store it in the refrigerator to preserve its excellent aromatic properties and ensure the product is in optimal conditions.
Vacuum-packed Parmigiano-Reggiano can be stored in the refrigerator for up to 6 months at a temperature between 4 and 8 °C. It is important that the original packaging is tightly sealed and that the product is not exposed to air.
We recommend that you open it a day before use to allow it to be saturated with oxygen.
Store unused cheese in the special paper labeled Parmigiano-Reggiano (sent with the product). Wrapped in this way, the cheese can be stored in the refrigerator for up to a month.
