Parmigiano-Reggiano cheese gets its name from the provinces of Parma and Reggio Emilia, where this iconic cheese is produced.

The names "Parmigiano-Reggiano" and "Parmesan" are protected by Italian and European law as designations of origin, meaning that only cheeses produced in these regions can bear these names.

Over the centuries, Parmesan has earned titles such as "King of Cheeses" and "practically perfect food" due to its exceptional quality.

This special Parmigiano-Reggiano cheese is produced by Latteria Nuova Mandrio, a cooperative founded in 1948 by farmers from Correggio. The company is a member of the Consorzio del Formaggio Parmigiano-Reggiano consortium, which strictly controls the quality and authenticity of the products as a supervising body.

Parmigiano-Reggiano is an incredibly versatile ingredient due to its varying flavor and aroma notes depending on its aging, pairing wonderfully with fresh fruits, bold wines, craft beers, or jams.

Nutritionally, it's also a powerhouse: at least 32% of its energy value comes from proteins, and essential amino acids particularly support an active lifestyle, making it especially beneficial for athletes.

The 50-month aged Parmigiano Reggiano cheese is called "very old"; its color is even darker, and this cheese is much more mature and intense than even the old (3-year aged) versions, a true specialty!

Parmigiano-Reggiano aged for more than 4 years is particularly dry, crumbly, and grainy, with an intense and distinct aroma. Notes of spices and dried fruits dominate, along with a deep, nutty flavor with caramel undertones and a long, lingering finish. Perfect when tasted with honey or balsamic vinegar.

It is excellently digestible and very rich in nutrients, can be consumed by those with lactose intolerance, and is also suitable for young children.

How to store it?

After purchase, it is advisable to store it in the refrigerator to preserve its excellent aromatic properties and ensure optimal conditions for the product.

Vacuum-packed Parmigiano-Reggiano can be stored in the refrigerator for up to 6 months, at a temperature between 4 and 8 °C. It is important that the original packaging is well sealed and that the product is not exposed to air.

We recommend opening it one day before use to allow it to oxygenate.

Keep unused cheese in the special paper marked Parmigiano-Reggiano (which we send with the product). When wrapped this way, the cheese can be stored in the refrigerator for one month.
