Pecorino Romano D.O.P. is one of Italy's oldest and most renowned Protected Designation of Origin cheeses, highly esteemed worldwide and ranked among the country's most celebrated cheeses alongside Parmigiano-Reggiano.
It is made exclusively from sheep's milk in the traditional regions of Sardinia, Lazio, and the province of Grosseto, boasting over 2000 years of tradition. Its origins trace back to the Roman Empire, where this aged sheep's milk cheese was a staple of legionaries' diets due to its rich nutritional value and excellent preservation. The same artisanal techniques have been passed down through generations to the current DOP production standards.
This cheese has a hard, compact texture, and as it ages, its color ranges from straw-yellow to ivory. Its flavor is savory, distinctive, and slightly spicy, with a characteristic salty taste that deepens over time, making it ideal as a table cheese but especially suitable for grating.
Its strong character gives classic Italian pasta dishes—like cacio e pepe, amatriciana, and carbonara—their authentic, full-bodied flavor, where the sharp, aromatic notes of Pecorino Romano penetrate the rich sauces, enlivening every bite.
