This special delicacy is part of Rosara's latest product line. The best Piquillo peppers from Lodosa, protected by the Spanish designation of origin, are carefully selected and grilled over beech wood. The peppers are peeled without adding water, thus preserving their intense flavor, and then filled with a delicious béchamel sauce made with porcini mushrooms, whose sweet and sour flavor is given by a Reineta apple-based sauce.
The process is extremely meticulous and time-consuming, but the result is worth all the effort: the end result is heavenly! The dish is also exceptionally low in fat (1.8%) and completely gluten-free.
The peppers are very soft, so it is advisable to carefully remove them one by one with a spoon after opening the can, then serve them with the sauce poured over them. If you want to easily remove the peppers without damaging them, it is worth placing the unopened can in a warm water bath for a few minutes: place it in a saucepan, pour enough water to cover it, and heat over low heat.
It can be served with fried mushrooms, apple and pear compote, baked apples, pineapple or pears marinated in syrup, freshly grilled foie gras, etc.
