Parmigiano 101 - How Is It Made?

Parmigiano Reggiano, the Italian hard cheese is probably the most famous cheese in the world, also called as the "King of Cheeses".

Parmigiano Reggiano has its origins in the Middle Ages, dating back to the 12th century. Monks in the Po River Valley, specifically in the provinces of Parma, Reggio Emilia, and Modena, developed this cheese to create a long-lasting and transportable food source. The unique process, using local milk, natural whey, and salt, has remained largely unchanged for over 900 years.

Fame comes with a price: there are numerous counterfaits and lower quality cheeses pretending to be "parmesan".
