Guanciale – traditional Italian bacon from the Sicilian workshop of Salumi Caputo.

Guanciale is aged pork jowl (its name comes from the Italian word guancia = cheek), rich in flavor and succulent. It is highly valued in Italian cuisine for its deep taste and beautiful fat marbling that practically melts in your mouth.

Unlike smoked bacon, guanciale is cured naturally with salt and mostly pepper, giving it an intense, pure pork flavor that enhances dishes without overpowering them.

In classic Italian cuisine, guanciale is essential in masterpieces like Pasta alla Carbonara, Amatriciana, and Gricia, where the rendered fat of the guanciale forms the base of the sauce's flavor. But it is much more versatile than that: diced and fried until crispy, it can be used in soups, stews, bruschetta toppings, or simply enjoyed thinly sliced with rustic bread and olives.
