This cheese is made from 100% sheep's milk and undergoes a careful aging process, during which it develops a firm yet pleasantly creamy texture and a deep, nutty flavor. The special flavor profile, which is thanks to the Pedro Ximénez wine added during production – famous for its intense, raisiny, caramel notes – develops during 12 months of aging.
The result is a rich and harmonious cheese: the slightly salty, full flavor of the sheep cheese is complemented by subtle sweetness and dried fruit notes. It's not overpowering, but offers a beautifully balanced taste experience.
