Granja Rinya is a multi-generational Spanish family cheese workshop that combines traditional cheesemaking knowledge with a modern, premium approach. The manufactory, operating in the La Mancha region, aims to elevate the character of classic Spanish sheep cheeses to a new level with special flavorings and carefully controlled aging technology.

Their cheeses, produced under the Carmen brand name, are based on quality ingredients, long aging, and an intense, yet harmonious flavor profile.

Granja Rinya Oveja Curado con Trufa is a premium aged sheep cheese that combines the rich aromas of characteristic Spanish sheep's milk with the elegant, earthy notes of black truffle. The cheese undergoes more than 105 days of aging, during which its texture becomes firm yet pleasantly creamy, and its flavor profile becomes deep, long-lasting, and complex. The truffle does not overpower the natural character of the sheep cheese; instead, it enriches it with sophisticated layers. This special cheese was also awarded a silver medal at the World Cheese Awards.

Its aroma features intense, earthy, and slightly nutty notes, made unique by the elegant, deep tones of the truffle. Its flavor is both rich and balanced: the full-bodied, slightly spicy character typical of sheep cheese harmoniously meets the subtly mushroomy, umami notes of the truffle. Its texture is firm and easy to slice, yet it melts slowly in the mouth, providing a creamy sensation.

It is an excellent choice for premium cheese boards, paired with fresh bread, walnuts, or honey, but it also works wonderfully in gourmet dishes. Grated, it adds a special character to risottos, fresh pasta, or even potato dishes.

Due to its rich aromas, it pairs particularly well with full-bodied red wines, barrel-aged white wines, or sparkling wines.

Before consumption, it is advisable to let it rest at room temperature for 15-20 minutes to allow its aromas to fully unfold.

The cheese is available in vacuum-packed slices of approximately 180-250 grams; you can select the desired size at the top of the page.

Ingredients: pasteurized sheep's milk, truffle cream min. 3% ((mushrooms (Agaricus Bispora) 65%, sunflower oil, olive oil, porcini mushrooms 10%, truffle (Tuber aestivum) 8%, pepper, salt, parsley, truffle and garlic aroma)), salt, stabilizer: calcium chloride, rennet, lactic acid ferment, lysozyme (contains egg).
