For early-harvest olive oil, the olives are intentionally not left to fully ripen. Although less oil can be extracted from the greener fruit, the result is a fresher, more intense, and greener-character extra virgin olive oil.
La Chinata olive oils are made from selected olives from the Sierra de Gata region, in the northwestern part of the province of Cáceres. The producer processes the selected harvest using cold extraction.
This cosecha temprana, or early-harvest variety, also comes in a very practical 300 ml so-called biberón bottle. The Spanish name literally means baby bottle, but in the kitchen, it refers to this easy-to-dose, squeeze-bottle type. It is primarily used as a finishing oil: on tomatoes, burrata, salads, grilled vegetables, toast, or on top of finished pasta. It is worth tasting the oil on its own rather than hiding it in a long cooking process.
Serving tip: a slice of fresh, good bread, fresh tomatoes, a pinch of salt, and a generous drizzle of cosecha temprana - one of the simplest versions of a Spanish breakfast.
