Quesos Corcuera has been making cheese since 1947 in La Puebla de Montalbán, located in the province of Toledo. In addition to their famous Manchegos and characterful goat cheeses, the family-run creamery’s range also features an important selection of quesos de mezcla, or cheeses made from a blend of different milks.
The Queso de Mezcla Tierno is a young, short-aged Spanish cheese made by blending 60% pasteurized cow's milk and 40% pasteurized goat's milk. In Spanish cheese culture, the term "tierno" denotes young, short-aged cheeses: these retain much of the milk's fresh, mild character, and their texture is softer and more elastic than that of more mature cheeses.
The two types of milk complement each other perfectly. The cow's milk provides the cheese's soft, milky, and buttery-creamy base, while the goat's milk adds freshness, a slight acidity, and a subtly piquant character. Its flavor is harmonious and easy to love, much milder than a longer-aged goat cheese: alongside notes of fresh milk, butter, and cream, the characteristic aroma of goat's milk appears only in a restrained manner.
Its texture is soft, elastic, and pleasantly creamy, making it an excellent choice for those who are looking for something lighter instead of intensely aged Spanish cheeses.
A versatile table cheese: excellent with fresh bread, olives, tomatoes, and olive oil, on a tapas or cheese board, but also well-suited for sandwiches and salads. As for drinks, a light, dry Spanish white wine, rosado, or cava makes a great accompaniment.
