The meeting of two iconic Modenese flavors: Giusti’s thick, sweet balsamic vinegar and Italian black summer truffle are aged together in wooden barrels to create an intense, complex, and exceptionally aromatic condiment.

Giusti has been producing balsamic vinegar in Modena since 1605, with family expertise passed down through seventeen generations. Today, the house continues to age its balsamic vinegars in historic wooden barrels, while reimagining traditional Modenese methods with new flavors and culinary possibilities.

The base for this truffle condiment is not a simple balsamic glaze, but one of Giusti’s premium classics: the 3 Gold Medals Aceto Balsamico di Modena IGP. This is one of Giusti’s thicker, sweeter balsamic vinegars, characterized by notes reminiscent of plum jam, red fruits, honey, and vanilla.

To this, they add black summer truffle (Tuber aestivum). The dehydrated truffle is not simply mixed into the finished product; it is added directly to the balsamic vinegar in Giusti’s old oak barrique barrels, where it rests until the bittersweet, fruity character of the balsamic and the earthy aroma of the truffle form a harmonious union.

The finished condiment is 97% Aceto Balsamico di Modena IGP, complemented by additional cooked grape must, black summer truffle, and flavoring. It is not a balsamic glaze thickened with starch: its dense, velvety texture comes primarily from the concentrated balsamic vinegar itself.

On the palate, it is full-bodied and lingering, with the fruity sweetness of the Giusti balsamic followed by an intense truffle aroma. For this reason, a little goes a long way—it is best used as a finishing condiment rather than a traditional vinegar.

It pairs particularly well with Parmigiano Reggiano and other aged cheeses, egg dishes, mushrooms, and beef. A few drops on fresh tagliatelle or tagliolini, porcini risotto, or Parmigiano cream are enough to add an entirely new character to the dish.

A special Giusti for those who love truffles—and a great example of how a centuries-old Modenese tradition can be reimagined while preserving its core character.
