Ditta Artigianale experts decided that in this new blend, named ONE, they would use coffee from only ONE country, Honduras, and from only ONE producer, as well as only ONE botanical variety, Catuai, which comes from only ONE production region, a small plot of land.

They work with only ONE producer, Marisabel and Moises Caballero from Finca El Puente.

Finca El Puente is a renowned coffee plantation in the La Paz region of Honduras, an area known for producing high-quality and special coffees. The plantation is managed by Marysabel Caballero and her husband, Moises Herrera, who are two prominent figures in the coffee industry, winners of numerous awards, including the Cup of Excellence.

Francesco – one of the owners of the Florence roastery and cafe – used four different processing methods to prepare the coffee.

In fact, it is a blend of one washed, one natural, one semi-anaerobic, and one anaerobic coffee. He chose this approach to demonstrate how a specific origin can develop in creating different flavour profiles.

Four different processes that together create complexity, intensity, acidity, and sweetness, not just to make one espresso, but a truly unique espresso. All this serves to showcase the global development of coffee, but also the expertise of individual countries of origin.

The head of coffee at Ditta Artigianale, Francesco Masciullo, won the 2026 Italian Coffee Roasting Championship, thereby officially earning the title of “Italy’s Best Coffee Roaster”.
