Terre Dei Trulli
Terre dei Trulli comes from the experience of the Casulli family, founded in 1986 and backed up by centuries-old traditions in livestock and agricultural sector.
The company’s mission has always been inspired by the excellence and quality of both products and services offered. They produce Italian products selected through quality and wholesomeness of raw materials and authenticity of production methods.
Nonna Mariangela is the paternal grandmother of the Casulli family and the Terre Dei Trulli brand. She lived in Alberobello, Puglia, in one of the largest farms "Masseria Vaccari", about 150 hectares of pastures, woods, vines and olive groves.
"Padrona Marietta", as everyone in the rural area called her, used to set the characteristic wood-burning oven every Saturday with oak wood fire, then, she knead the taralli dough and baked them until Sunday, the day on which they usually ate them for lunch and dinner, along with bread; everybody nibbled from the basket while they were waiting for the soup.
These were the best moments of the family gathered during the holidays, sitting at the table, joking, eating a taralli and drinking in conviviality.
This used to happen during non-working days; during the week, however, taralli were eaten as snacks: the farmers took them from the baskets, filled their pockets and ate some at work every now and then.
The "secret" ingredients of Padrona Marietta's recipe:
- The territory
- The ancient and original recipe of apulian taralli
- Proper measurment of ingredients
- Proper processing and baking time
- The sincere embrace between passion for cooking and love for others
The first products branded "Terre dei Trulli" were taralli, followed shortly by other bakery products.
After the excellent results obtained, a line of dry durum wheat pasta was introduced at first in the traditional regional formats (orecchiette, strozzapreti), and then in special formats, with unconventional flours, spices and dehydrated organic vegetables.
A constantly updated production that starts from traditions and evolves, behind the impetus of the times and new consumers’ needs.
High quality raw materials are the ingredients that make the difference in Terre dei Trulli products. The extra virgin olive oil produced in an ancient oil mill in Alberobello, salt, white wine, and exclusively Apulian and Italian soft wheat flour, are the basis of their taralli and other traditional bakery products that make them non-oily, crunchy, fragrant, and tasty in an authentic way.
Only the addition of a few simple selected ingredients of the highest quality gives life to the "Speciali" Terre dei Trulli, created to give a bit of vivacity and uniqueness to tradition.
